Description

A warm and hearty dish featuring roasted butternut squash and ground turkey, perfect for weeknight dinners.

Ingredients

Scale
  • 1 butternut squash, peeled and diced
  • 1 pound ground turkey
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced butternut squash with olive oil, garlic powder, onion powder, salt, and pepper in a large bowl.
  3. Spread the squash on a baking sheet in one layer.
  4. Roast the squash for about 25 to 30 minutes until tender and lightly browned.
  5. While the squash roasts, heat a skillet over medium heat.
  6. Cook the ground turkey in the skillet until browned and fully cooked, seasoning with salt and pepper.
  7. Combine the roasted squash with the cooked turkey and mix gently.
  8. Serve warm and garnish with fresh herbs if you like.

Notes

For a lighter dish, use less oil or a spray of oil on the squash. This dish pairs well with a crisp green salad or warm bread.
