- 2 cups brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder

- Zest of 1 lemon
- 1 cup fresh strawberries, chopped
- Juice of 1 lemon
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- Mix the melted butter and brown sugar in a large bowl until smooth.
- Add the eggs and vanilla and stir until the mix is even.
- Whisk the flour, baking powder, salt, and lemon zest in another bowl.
- Stir the dry mix into the wet mix until just combined.
- Fold in the chopped strawberries and lemon juice.
- Pour the batter into the prepared pan and spread it flat.
- Bake for 25 to 30 minutes or until a toothpick comes out clean.
- Let the blondies cool before cutting into bars.
Notes
Use fresh strawberries for the best flavor and avoid overmixing. If strawberries are juicy, pat them dry before adding to the batter.
