Description
A simple, rich, and warm soup made with ravioli, perfect for a comforting meal.
Ingredients

- 1 onion, diced
- 3 garlic cloves, minced
- 2 celery stalks with leaves, chopped
- 1 can (28 oz) whole peeled tomatoes
- 1 1/2 cups chicken bone broth
- 2 tbsp light brown sugar
- 1 sprig thyme, fresh
- 1/2 cup heavy cream
- Salt and black pepper, to taste
- 10 oz ravioli
- Fresh basil, for garnish
Instructions
- Heat a medium pot over medium heat and add a splash of oil.
- Add the diced onion and cook until soft.
- Stir in the minced garlic and chopped celery leaves, cooking for one minute.
- Add the whole peeled tomatoes and crush them with your spoon.
- Pour in the chicken bone broth and stir well.
- Add light brown sugar and fresh thyme.
- Bring the soup to a soft boil, then lower the heat to simmer.
- Let it simmer for about 10 minutes to blend flavors.
- Add the ravioli and simmer until tender.
- Stir in the heavy cream and warm through.
- Taste and add salt and black pepper as needed.
- Remove the thyme sprig and serve with torn fresh basil on top.
Notes
For a lighter version, use low fat cream or milk. You can also add more chopped vegetables or use whole wheat ravioli for added fiber.
