A cozy and flavorful dish featuring chicken breasts stuffed with a savory mix of mushrooms, spinach, and cream cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups mushrooms, chopped
  • 1 cup spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Olive oil, for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Sauté chopped mushrooms and garlic until soft.
  4. Stir in chopped spinach and cook until wilted.
  5. Mix the cooked vegetable mix with cream cheese and Parmesan.
  6. Season the mix with salt and pepper.
  7. Cut a pocket into each chicken breast.
  8. Stuff each pocket with the cheese and mushroom mix.
  9. Heat more olive oil and sear each stuffed breast on both sides.
  10. Transfer the seared chicken to a baking dish.
  11. Bake for 20 to 25 minutes until the chicken reaches 165°F.
  12. Let the chicken rest for a few minutes before serving.

Notes

For a healthier version, substitute half the cream cheese with Greek yogurt. Adding herbs and different cheeses can also enhance the flavor.
