A quick and flavorful Garlic Cauliflower Mushroom Skillet that makes a perfect side or light main meal, packed with fresh ingredients.

- 2 tbsp olive oil
- 2 tbsp butter
- 1 small head cauliflower, cut into florets
- 8 oz mushrooms, sliced
- 4 cloves garlic, minced
- ½ tsp smoked paprika
- ½ tsp Italian seasoning
- Salt & black pepper, to taste
- 1 tbsp lemon juice
- ¼ cup Parmesan cheese (optional)
- Fresh parsley, for garnish
Instructions
- In a large skillet over medium heat, add olive oil and butter. Let them melt and combine.
- Add the cauliflower florets and cook for 5-6 minutes until slightly golden.
- Add the sliced mushrooms and continue cooking for 4-5 more minutes until softened.
- Stir in the minced garlic, smoked paprika, Italian seasoning, salt, and pepper.
- Cook for another 2 minutes until fragrant.
- Drizzle with lemon juice and sprinkle with Parmesan if desired.
- Garnish with fresh parsley and serve hot.
Notes
For a lighter touch, substitute butter with a vegan alternative or use only olive oil. Feel free to add more veggies like spinach or bell peppers for added nutrition.
