Description

A quick and flavorful Garlic Cauliflower Mushroom Skillet that makes a perfect side or light main meal, packed with fresh ingredients.


Ingredients

  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 small head cauliflower, cut into florets
  • 8 oz mushrooms, sliced
  • 4 cloves garlic, minced
  • ½ tsp smoked paprika
  • ½ tsp Italian seasoning
  • Salt & black pepper, to taste
  • 1 tbsp lemon juice
  • ¼ cup Parmesan cheese (optional)
  • Fresh parsley, for garnish

Instructions

  1. In a large skillet over medium heat, add olive oil and butter. Let them melt and combine.
  2. Add the cauliflower florets and cook for 5-6 minutes until slightly golden.
  3. Add the sliced mushrooms and continue cooking for 4-5 more minutes until softened.
  4. Stir in the minced garlic, smoked paprika, Italian seasoning, salt, and pepper.
  5. Cook for another 2 minutes until fragrant.
  6. Drizzle with lemon juice and sprinkle with Parmesan if desired.
  7. Garnish with fresh parsley and serve hot.

Notes

For a lighter touch, substitute butter with a vegan alternative or use only olive oil. Feel free to add more veggies like spinach or bell peppers for added nutrition.
