- 3 cups all-purpose flour
- 1 1/2 teaspoons salt
- 1/2 teaspoon instant yeast
- 1 1/2 cups warm water
- 2 tablespoons olive oil
- 2 tablespoons fresh herbs (like rosemary, thyme, or parsley), chopped
- 2 cloves garlic, minced
Instructions
- Combine the flour, salt, and instant yeast in a large bowl.
- Stir in the warm water until you have a shaggy dough.
- Add the olive oil, minced garlic, and chopped herbs and mix until even.
- Cover the bowl and let the dough rise at room temperature for 12 to 18 hours.
- Preheat the oven with the Dutch oven inside to 450°F (230°C) for 30 minutes.
- Turn the dough out on a floured surface and shape it into a loose ball.
- Let the shaped dough rest for about 30 minutes while the pot heats.
- Carefully place the dough into the hot Dutch oven and cover it.
- Bake covered for 30 minutes.
- Remove the lid and bake 15 to 20 more minutes until the crust turns golden brown.
- Let the loaf cool on a wire rack before slicing and serving.
Notes
For a nutty taste, replace half the white flour with whole wheat. Keep an eye on the crust to avoid burning.
