  • 1/2 teaspoon instant yeast
  • 1 1/2 cups warm water
  • 2 tablespoons olive oil
  • 2 tablespoons fresh herbs (like rosemary, thyme, or parsley), chopped
  • 2 cloves garlic, minced

Instructions

  1. Combine the flour, salt, and instant yeast in a large bowl.
  2. Stir in the warm water until you have a shaggy dough.
  3. Add the olive oil, minced garlic, and chopped herbs and mix until even.
  4. Cover the bowl and let the dough rise at room temperature for 12 to 18 hours.
  5. Preheat the oven with the Dutch oven inside to 450°F (230°C) for 30 minutes.
  6. Turn the dough out on a floured surface and shape it into a loose ball.
  7. Let the shaped dough rest for about 30 minutes while the pot heats.
  8. Carefully place the dough into the hot Dutch oven and cover it.
  9. Bake covered for 30 minutes.
  10. Remove the lid and bake 15 to 20 more minutes until the crust turns golden brown.
  11. Let the loaf cool on a wire rack before slicing and serving.

Notes

For a nutty taste, replace half the white flour with whole wheat. Keep an eye on the crust to avoid burning.
