- 1 9-inch pie crust (homemade or store-bought), pre-baked
- 4 medium ripe tomatoes, sliced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 2 tablespoons chopped fresh basil (plus more for garnish)
- 1 tablespoon chopped chives
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the tomatoes and lay them on paper towels. Sprinkle with salt and let sit for 10 minutes to draw out moisture, then pat dry.
- In a bowl, mix mayonnaise, Dijon mustard, cheddar, mozzarella, basil, and chives until creamy.
- Arrange half the tomato slices in the pre-baked crust. Sprinkle with black pepper and garlic powder.
- Spread half of the cheese mixture over the tomatoes.
- Repeat with remaining tomatoes and cheese mixture, spreading evenly.
- Bake for 25–30 minutes until golden and bubbly.
- Let cool at least 10 minutes before slicing. Garnish with fresh basil and a crack of black pepper.
Notes
Salting and draining tomatoes is key to a crisp crust. Letting the pie rest before slicing helps the filling set. Store leftovers covered in the fridge for 2–3 days.
