Spicy and sweet ginger molasses cookies filled with creamy eggnog frosting, perfect for the holidays.
Ingredients

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar
- 1/4 cup molasses
- 1 egg
- 1 teaspoon vanilla extract
- Eggnog frosting (store-bought or homemade)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
- In another bowl, cream the butter and brown sugar until light and fluffy.
- Beat in the molasses, egg, and vanilla until well combined.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Drop tablespoons of dough onto a baking sheet and flatten slightly.
- Bake for 10-12 minutes until set and edges are lightly golden.
- Let cool on the baking sheet, then transfer to a wire rack.
- Once cooled, spread eggnog frosting on the bottom of one cookie and sandwich with another.
Notes
For a healthier twist, substitute whole wheat flour for half of the all-purpose flour and use coconut sugar instead of brown sugar.
