Description

Spicy and sweet ginger molasses cookies filled with creamy eggnog frosting, perfect for the holidays.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/4 cup molasses
  • 1 egg
  • 1 teaspoon vanilla extract
  • Eggnog frosting (store-bought or homemade)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, cream the butter and brown sugar until light and fluffy.
  4. Beat in the molasses, egg, and vanilla until well combined.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Drop tablespoons of dough onto a baking sheet and flatten slightly.
  7. Bake for 10-12 minutes until set and edges are lightly golden.
  8. Let cool on the baking sheet, then transfer to a wire rack.
  9. Once cooled, spread eggnog frosting on the bottom of one cookie and sandwich with another.

Notes

For a healthier twist, substitute whole wheat flour for half of the all-purpose flour and use coconut sugar instead of brown sugar.
