Ingredients

  • 1 cup heavy cream
  • 1/2 cup brewed coffee
  • 1/4 cup sugar
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/4 cup molasses
  • 2 teaspoons gelatin (or agar-agar for a vegetarian option)
  • 1 tablespoon water
  • Chocolate glaze or shell (for topping)

Instructions

  1. In a small bowl, dissolve the gelatin in water and let it bloom for about 5 minutes.
  2. In a saucepan, combine the brewed coffee, sugar, molasses, and spices over medium heat until combined.
  3. Remove from heat and stir in the bloomed gelatin until fully dissolved.
  4. Whip the heavy cream in a separate bowl until stiff peaks form.
  5. Carefully fold the coffee mixture into the whipped cream until well combined.
  6. Pour the mousse into dome molds or serving cups and refrigerate for at least 240 minutes or until set.
  7. Once set, carefully remove from molds and top with chocolate glaze or shell before serving.

Notes

Consider using coconut cream for a dairy-free option. These mousse domes can be made a day in advance and stored in the fridge.
