Ingredients

- 1 cup heavy cream
- 1/2 cup brewed coffee
- 1/4 cup sugar
- 2 teaspoons ground ginger
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/4 cup molasses
- 2 teaspoons gelatin (or agar-agar for a vegetarian option)
- 1 tablespoon water
- Chocolate glaze or shell (for topping)
Instructions
- In a small bowl, dissolve the gelatin in water and let it bloom for about 5 minutes.
- In a saucepan, combine the brewed coffee, sugar, molasses, and spices over medium heat until combined.
- Remove from heat and stir in the bloomed gelatin until fully dissolved.
- Whip the heavy cream in a separate bowl until stiff peaks form.
- Carefully fold the coffee mixture into the whipped cream until well combined.
- Pour the mousse into dome molds or serving cups and refrigerate for at least 240 minutes or until set.
- Once set, carefully remove from molds and top with chocolate glaze or shell before serving.
Notes
Consider using coconut cream for a dairy-free option. These mousse domes can be made a day in advance and stored in the fridge.
