Ingredients

  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup brewed gingerbread coffee
  • 24 ladyfingers
  • 1 cup gingerbread cookies, crumbled
  • Cocoa powder or grated chocolate for dusting

Instructions

  1. In a mixing bowl, beat together mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth.
  2. Dip each ladyfinger into the brewed gingerbread coffee quickly to soak.
  3. Layer half of the soaked ladyfingers in the bottom of a dish.
  4. Spread half of the mascarpone mixture over the ladyfingers.
  5. Sprinkle a layer of crumbled gingerbread cookies on top.
  6. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
  7. Dust the top with cocoa powder or grated chocolate.
  8. Refrigerate for at least 4 hours or overnight before serving.

Notes

For a lighter version, replace heavy cream with Greek yogurt. Store leftovers in an airtight container in the fridge for up to three days.
