- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup brewed gingerbread coffee
- 24 ladyfingers
- 1 cup gingerbread cookies, crumbled
- Cocoa powder or grated chocolate for dusting
Instructions
- In a mixing bowl, beat together mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth.
- Dip each ladyfinger into the brewed gingerbread coffee quickly to soak.
- Layer half of the soaked ladyfingers in the bottom of a dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Sprinkle a layer of crumbled gingerbread cookies on top.
- Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
- Dust the top with cocoa powder or grated chocolate.
- Refrigerate for at least 4 hours or overnight before serving.
Notes
For a lighter version, replace heavy cream with Greek yogurt. Store leftovers in an airtight container in the fridge for up to three days.
