Ingredients

- 1 cup pomegranate juice
- 1/2 cup sugar
- 2 tablespoons gelatin
- 2 cups heavy cream
- 1 teaspoon vanilla extract
- Soft sponge cake
- Mirror glaze (chocolate or fruit-based)
Instructions
- In a saucepan, combine pomegranate juice and sugar over medium heat until dissolved.
- Sprinkle gelatin over the juice mixture and stir until fully dissolved.
- Remove from heat and let cool slightly.
- Whip heavy cream until soft peaks form, then fold in the pomegranate mixture.
- Pour mousse into dome molds, layering with pieces of soft sponge.
- Freeze until set.
- Once set, remove from molds and coat with mirror glaze before serving.
Notes
Make sure the heavy cream is cold before whipping. Let the pomegranate mixture cool slightly before folding it to maintain light texture.
