- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- ½ cup buttermilk
- ½ cup grapefruit juice
- Zest of 1 grapefruit
- 1 tablespoon poppy seeds
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Cream the butter and sugar until light and fluffy.
- Beat in the eggs one at a time.
- Mix in the grapefruit juice and zest.
- Combine the flour, baking powder, baking soda, salt, and poppy seeds in a separate bowl.
- Add the dry mix to the wet mix in parts, alternating with the buttermilk, until just combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 25 to 30 minutes or until a toothpick in the center comes out clean.
- Let the cake cool in the pan for 10 minutes.
- Transfer the cake to a wire rack and cool completely.
- Dust with powdered sugar just before serving if desired.
Notes
For a lighter cake, swap half the butter for Greek yogurt. You can substitute buttermilk with a milk and vinegar mix if necessary.
