- 1 box chocolate cake mix
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup chocolate chips
- 1/2 cup mint chocolate chips
- 1/2 teaspoon peppermint extract
- Optional: powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the chocolate cake mix, vegetable oil, and eggs together until smooth.
- Stir in the chocolate chips and mint chocolate chips.
- Add the peppermint extract and mix well.
- Scoop tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until the edges are set.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
- Dust with powdered sugar if you like before serving.
Notes
Don’t overmix your cookie dough; it should be combined but not beaten excessively. Slightly underbaked cookies are soft and chewy!
