- 1 prepared pizza dough (store-bought or homemade)
- 1 tablespoon olive oil
- 1 whole head garlic
- 2 cups fresh spinach leaves
- 1 tablespoon olive oil (for sautéing spinach)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- 1/2 cup ricotta cheese
- 1/2 cup crumbled feta cheese
- Fresh basil leaves, for garnish
Instructions
- Preheat oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast 30–35 minutes until soft and fragrant.
- Heat 1 tablespoon olive oil in a pan, sauté spinach with salt and pepper until wilted. Set aside and squeeze out excess moisture.
- Increase oven temperature to 475°F (245°C). Roll out pizza dough on a floured surface and transfer to a baking sheet or preheated pizza stone.
- Squeeze roasted garlic cloves from skins, mash into a paste, and spread evenly over the dough.
- Top with shredded mozzarella, sautéed spinach, dollops of ricotta, and crumbled feta.
- Bake 12–15 minutes until crust is golden and cheese is melted and bubbling.
- Remove from oven, garnish with fresh basil leaves, slice, and serve warm.
Notes
For extra crispiness, preheat a pizza stone. Use roasted garlic for a sweet, mellow flavor. Avoid overloading toppings to keep the crust from getting soggy.
