Description
Light and flavorful skewers of cherry tomatoes, fresh mozzarella, and basil, grilled to perfection.
Ingredients

- 1 pint cherry tomatoes, washed and dried
- 8 ounces fresh mozzarella balls, small size or bocconcini, drained
- 1 bunch fresh basil leaves, large leaves picked
- 2 tablespoons extra virgin olive oil
- 2 tablespoons balsamic glaze, store bought or homemade
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 12 to 16 wooden skewers or metal skewers, soaked if wooden
- Optional: 1 teaspoon honey to mix with balsamic for extra gloss
- Optional: lemon zest from 1 lemon for bright finish
Instructions
- Preheat the grill or grill pan to medium heat.
- Thread a tomato, a basil leaf, and a mozzarella ball on each skewer, repeating until the skewer is full.
- Lightly brush the skewers with olive oil and season with salt and pepper.
- Place skewers on the hot grill and cook for about 1 minute per side until you have light char marks.
- Turn the skewers gently with tongs to brown all sides without melting the cheese.
- Remove skewers from the grill to a cool platter to stop cooking.
- Drizzle balsamic glaze over the warm skewers and add lemon zest if using.
- Let the skewers rest for a minute to let the flavors settle.
- Serve right away on a board or plate for guests to pick up.
Notes
Soak wooden skewers for 20 minutes before use to prevent burning. Use firm but ripe cherry tomatoes for the best flavor.
