Description

Quick and comforting grilled chicken and broccoli bowls with a rich and creamy garlic sauce, perfect for the whole family.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 1 cup cooked grains (rice, quinoa, couscous, etc.)
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 1 tablespoon lemon juice
  • Optional: Fresh parsley or chives for garnish

Instructions

  1. Season chicken with olive oil, salt, and pepper.
  2. Heat the grill or grill pan to medium-high.
  3. Grill chicken until cooked through and lightly charred, flipping once.
  4. Toss broccoli with olive oil, lemon juice, and a pinch of salt.
  5. Roast broccoli at 400°F until crisp-tender.
  6. Cook grains according to package instructions and keep warm.
  7. Melt butter in a saucepan over medium heat.
  8. Sauté garlic in butter until fragrant.
  9. Stir in heavy cream and simmer until sauce thickens.
  10. Slice grilled chicken across the grain.
  11. Layer grains, sliced chicken, and broccoli in bowls.
  12. Drizzle creamy garlic sauce over the bowls and garnish.

Notes

For a lighter version, use low fat milk mixed with cornstarch instead of heavy cream. Add roasted chickpeas for crunch and cauliflower rice to reduce carbs.
