Ingredients

  • 1 lb ground turkey
  • 3 bell peppers (red, yellow, green), sliced
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon tomato paste
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and cook for 2 minutes.
  3. Add garlic and sauté for 30 seconds.
  4. Add ground turkey and cook until browned, breaking it up as it cooks.
  5. Stir in sliced bell peppers and cook for about 5 minutes until they are tender-crisp.
  6. Add tomato paste, soy sauce, paprika, salt, and pepper and stir to coat everything.
  7. Let it simmer for 2 to 3 minutes, then remove from heat.
  8. Garnish with parsley if desired.

Notes

For a spicier version, add red pepper flakes or diced jalapeño with the garlic. Experiment with swapping turkey for chicken or tofu for a vegetarian option.
