Ingredients

  • 1 lb ground turkey
  • 2 medium zucchinis, diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic and sauté until the onion is soft.
  3. Add the ground turkey and break it apart, cooking until browned.
  4. Stir in the diced zucchini and chickpeas.
  5. Add paprika, Italian seasoning, salt, and pepper.
  6. Cook, stirring, until the zucchini is tender.
  7. Taste and adjust seasoning.
  8. Serve hot and garnish with fresh parsley.

Notes

Brown the turkey well for more flavor. Do not overcook the zucchini; keep it tender, not mushy. Taste before serving and add a pinch more salt if needed.
