- 1 lb ground turkey
- 2 medium zucchinis, diced
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic and sauté until the onion is soft.
- Add the ground turkey and break it apart, cooking until browned.
- Stir in the diced zucchini and chickpeas.
- Add paprika, Italian seasoning, salt, and pepper.
- Cook, stirring, until the zucchini is tender.
- Taste and adjust seasoning.
- Serve hot and garnish with fresh parsley.
Notes
Brown the turkey well for more flavor. Do not overcook the zucchini; keep it tender, not mushy. Taste before serving and add a pinch more salt if needed.
