Ingredients

  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/2 cup almond milk (or any milk)
  • 1/4 cup honey or maple syrup
  • 1 tablespoon cinnamon
  • 1/4 cup sugar (or coconut sugar)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, mix the melted coconut oil, almond milk, and honey or maple syrup.
  4. Combine the wet ingredients with the dry ingredients and mix until smooth.
  5. Spoon the mixture into a mini muffin pan, filling each cup about 3/4 full.
  6. Bake for 12-15 minutes, or until golden brown.
  7. In a small bowl, mix sugar and cinnamon.
  8. Once the churro bites are baked, roll them in the cinnamon-sugar mixture while they are still warm.
  9. Serve warm and enjoy!

Notes

For a vegan option, replace honey or maple syrup with agave nectar. Incorporate dark chocolate chips into the batter for extra flair.
