Ingredients

- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup coconut oil, melted
- 1/2 cup almond milk (or any milk)
- 1/4 cup honey or maple syrup
- 1 tablespoon cinnamon
- 1/4 cup sugar (or coconut sugar)
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, whisk together the flour, baking powder, and salt.
- In another bowl, mix the melted coconut oil, almond milk, and honey or maple syrup.
- Combine the wet ingredients with the dry ingredients and mix until smooth.
- Spoon the mixture into a mini muffin pan, filling each cup about 3/4 full.
- Bake for 12-15 minutes, or until golden brown.
- In a small bowl, mix sugar and cinnamon.
- Once the churro bites are baked, roll them in the cinnamon-sugar mixture while they are still warm.
- Serve warm and enjoy!
Notes
For a vegan option, replace honey or maple syrup with agave nectar. Incorporate dark chocolate chips into the batter for extra flair.
