Ingredients

  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1/4 cup lemon juice
  • zest of 1 lemon
  • 1 cup blueberries
  • 1/2 cup graham cracker crumbs
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix graham cracker crumbs and melted butter in a small bowl.
  3. Press crumbs into the bottom of mini cheesecake cups.
  4. Beat cream cheese, Greek yogurt, honey, lemon juice, lemon zest, and vanilla until smooth.
  5. Fold in the blueberries gently.
  6. Spoon the filling into the prepared crusts.
  7. Bake for 10 to 12 minutes until set.
  8. Let cool, then chill in the fridge for at least 2 hours.
