Ingredients

  • 1/2 cup assorted nuts (e.g., almonds, walnuts, cashews)
  • 1/2 cup assorted seeds (e.g., pumpkin seeds, sunflower seeds, chia seeds)
  • 1/2 cup dried fruits (e.g., raisins, cranberries, apricots)
  • 1/4 cup honey or maple syrup
  • 1/4 cup peanut butter or almond butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine oats, assorted nuts, seeds, and dried fruits.
  3. In another bowl, mix together honey or maple syrup, peanut butter or almond butter, vanilla extract, and cinnamon until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until everything is fully combined.
  5. Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet, pressing them down slightly.
  6. Bake for 10-12 minutes or until golden brown.
  7. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

These cookies can be adjusted based on your favorite nuts and seeds. Try adding different dried fruits or chocolate chips.
