- 1 rotisserie chicken, shredded
- 1 package gnocchi
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup spinach or kale
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat a little olive oil over medium heat.
- Add the diced carrots and celery; sauté until softened, about 5 minutes.
- Pour in the chicken broth and bring to a boil.
- Add the gnocchi and cook according to package instructions, about 2-3 minutes.
- Stir in the shredded rotisserie chicken and greens and continue to cook until the greens are wilted and the chicken is heated through.
- Season with garlic powder, salt, and pepper to taste.
- Serve warm.
