Ingredients

  • 1 rotisserie chicken, shredded
  • 1 package gnocchi
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup spinach or kale
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. In a large pot, heat a little olive oil over medium heat.
  2. Add the diced carrots and celery; sauté until softened, about 5 minutes.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the gnocchi and cook according to package instructions, about 2-3 minutes.
  5. Stir in the shredded rotisserie chicken and greens and continue to cook until the greens are wilted and the chicken is heated through.
  6. Season with garlic powder, salt, and pepper to taste.
  7. Serve warm.
