- 8 small corn or flour tortillas
- 1 cup cabbage slaw
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 1/2 avocado, sliced (optional)
- Sour cream or Greek yogurt (optional)
Instructions
- Toss shrimp with olive oil, chili powder, cumin, salt, and pepper.
- Heat a skillet or grill over medium-high heat.
- Cook the shrimp 2 to 3 minutes per side until pink.
- Warm the tortillas in a pan or over the grill.
- Place shrimp in the tortillas.
- Top with cabbage slaw, cilantro, and lime juice.
- Add avocado and sour cream if you like.
- Serve right away and enjoy.

For a lighter option, swap Greek yogurt for sour cream. Use corn tortillas to cut down on processed wheat. Avoid overcooking shrimp to maintain tenderness.
