Description

Delightful Heart Jam Cookies are a sweet treat with raspberry jam nestled in buttery cookies, perfect for sharing on any occasion.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1/4 teaspoon salt
  • 1 cup unsalted butter (at room temperature)
  • 1/3 cup light brown sugar (packed)
  • 1/3 cup granulated sugar
  • 1 large egg yolk
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 teaspoons almond extract
  • 1/2 cup raspberry jam

Instructions

  1. Line two 13×9 baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cornstarch, and salt. Set aside.
  3. In the large bowl of a stand mixer or with a hand mixer, cream together the butter with the sugars for 2-3 minutes until light and creamy.
  4. Scrape down the bowl, then mix in the egg yolk, vanilla, and almond extract.
  5. Set the mixer to low speed and add the dry ingredients slowly into the wet mixture.
  6. Use a 1 tablespoon sized dough scoop to make dough balls; roll them smoothly in your palms.
  7. Place each dough ball 2 inches apart on the prepared baking sheet. Press a heart shape into the top of the cookie dough with your pinky finger.
  8. Chill the baking sheets in the freezer for 30 minutes or the refrigerator for 1 hour.
  9. Preheat the oven to 375°F.
  10. Heat the raspberry jam in a microwave-safe bowl for 10-15 seconds until slightly runny.
  11. Fill the heart indent with about 1/2 teaspoon of jam.
  12. Bake for 10-12 minutes until the edges start to turn golden brown.
  13. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a cooling rack.

Notes

For a lighter version, use less butter or a butter alternative. Experiment with different jams for varied flavors.
