Ingredients

  • 1 lb lean ground turkey or chicken
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 2 cups low-sodium chicken broth
  • 1 cup plain Greek yogurt
  • 1/2 cup light cream cheese, softened
  • 2 tablespoons taco seasoning
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro, diced tomato, and tortilla chips for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté diced onion for 2–3 minutes until softened.
  2. Add minced garlic and ground turkey, cooking until browned and crumbly, about 5–7 minutes.
  3. Stir in taco seasoning, smoked paprika, diced tomatoes with green chilies, black beans, corn, and chicken broth. Bring to a simmer.
  4. Reduce heat and stir in Greek yogurt and cream cheese until melted and creamy.
  5. Simmer for 10–15 minutes, stirring occasionally, until thickened.
  6. Season with salt and pepper to taste.
  7. Serve warm, garnished with fresh cilantro, diced tomatoes, and tortilla chips.
