Description

A comforting and hearty Shepherd’s Pie topped with fluffy mashed potatoes and a savory beef and vegetable filling.


Ingredients

  • 1 lb ground beef
  • 4 cups mashed potatoes
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat and add onions and garlic. Cook until softened.
  3. Add ground beef and cook until browned, breaking it apart as it cooks.
  4. Stir in mixed vegetables, beef broth, tomato paste, Worcestershire sauce, salt, and pepper. Simmer for 5-10 minutes.
  5. Transfer the beef mixture to a baking dish and spread the mashed potatoes over the top.
  6. Bake for 20-25 minutes until the top is golden and bubbly.
  7. Let cool slightly before serving.

Notes

You can add different veggies like spinach or bell peppers for a healthy twist. Using lean ground turkey instead of beef also works well. Serve with a salad or crusty bread.
