Ingredients

- 1 lb ground beef
- 4 cups mashed potatoes
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 2 tbsp tomato paste
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat and add onions and garlic. Cook until softened.
- Add ground beef and cook until browned, breaking it apart as it cooks.
- Stir in mixed vegetables, beef broth, tomato paste, Worcestershire sauce, salt, and pepper. Simmer for 5-10 minutes.
- Transfer the beef mixture to a baking dish and spread the mashed potatoes over the top.
- Bake for 20-25 minutes until the top is golden and bubbly.
- Let cool slightly before serving.
Notes
You can add different veggies like spinach or bell peppers for a healthy twist. Using lean ground turkey instead of beef also works well. Serve with a salad or crusty bread.
