Description
A comforting weeknight meal featuring grilled or baked chicken with a sweet honey BBQ glaze, served alongside garlic Parmesan baby potatoes.

- 4 boneless, skinless chicken breasts
- 1 cup Honey BBQ sauce
- 2 pounds baby potatoes
- 3 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the grill or oven to medium-high heat.
- Season the chicken breasts with salt and pepper.
- Brush both sides of the chicken with Honey BBQ sauce.
- Grill or bake the chicken for about 6 to 7 minutes per side until cooked through.
- While the chicken cooks, place the baby potatoes in a pot and cover with salted water.
- Boil the potatoes until tender, about 15 minutes.
- Drain the potatoes and return them to the pot.
- Add the olive oil, minced garlic, Parmesan cheese, salt, and pepper to the potatoes.
- Toss the potatoes gently to coat them in the garlic and cheese.
- Plate the cooked chicken with the Garlic Parmesan Potatoes on the side.
- Garnish with fresh parsley and serve right away.
Notes
For lighter options, consider swapping regular potatoes for baby red and fingerling potatoes and reduce olive oil. Adding steamed green beans or roasted vegetables can enhance the meal.
