  • ¼ cup fresh coriander, chopped
  • 1 tablespoon lime juice
  • 2 ripe avocados, sliced
  • 1 tablespoon lime juice
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Pat the chicken dry and trim any fat.
  2. Mix honey, lime juice, lime zest, and garlic in a bowl.
  3. Season the chicken with salt and pepper.
  4. Heat oil in a skillet over medium-high heat.
  5. Sear the chicken until golden on each side.
  6. Lower the heat and pour the honey lime mix over the chicken.
  7. Cook until the sauce thickens and the chicken reaches a safe temperature.
  8. Let the chicken rest five minutes, then slice thin.
  9. Fluff the cooked rice with a fork.
  10. Stir coriander, lime juice, and salt into the rice.
  11. Toss avocado slices with lime juice, salt, and pepper.
  12. Place a scoop of rice on the plate.
  13. Top rice with sliced chicken.
  14. Arrange avocado slices around or on top.
  15. Spoon any pan sauce over the stack to finish.

Notes

Use brown rice for more fiber and adjust honey for a lighter dish. Serve with simple sides like salad or corn.
