Description

A bright and fresh recipe featuring seared chicken, avocado, and seasoned rice, perfect for quick weeknight dinners.


Ingredients

  • 4 pieces Chicken Breasts (boneless, skinless)
  • 3 tablespoons Honey (for marinade)
  • 2 tablespoons Lime Juice (freshly squeezed)
  • 1 tablespoon Lime Zest
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ground Cumin
  • to taste Salt
  • to taste Pepper
  • 1 cup Jasmine Rice (or basmati)
  • 2 cups Chicken Broth
  • 2 pieces Avocado (diced)
  • 1 small Red Onion (finely chopped)
  • 1/4 cup Fresh Cilantro (chopped)
  • 1 tablespoon Olive Oil
  • 4 pieces Lime Wedges (for garnish)

Instructions

  1. Mix honey, lime juice, lime zest, garlic, cumin, salt, and pepper in a bowl.
  2. Add chicken and coat well, then let it rest for at least 15 minutes.
  3. Heat oil in a pan over medium-high heat.
  4. Sear chicken until golden and cooked through, then rest for 5 minutes.
  5. Rinse rice until water runs clear.
  6. Combine rice and chicken broth in a pot, bring to a simmer, cover, and cook until tender.
  7. Fluff rice with a fork and stir in half the cilantro and a squeeze of lime.
  8. Dice avocado and toss with a little salt and chopped red onion.
  9. Slice or shred the chicken and arrange over a scoop of rice.
  10. Top with avocado mix, extra cilantro, and lime wedges.

Notes

Resting the chicken is important to keep juices inside. Adjust rice liquid ratios to prevent burning.
