- 4 pieces Chicken Breasts (boneless, skinless)
- 3 tablespoons Honey (for marinade)
- 2 tablespoons Lime Juice (freshly squeezed)
- 1 tablespoon Lime Zest
- 2 cloves Garlic (minced)
- 1 teaspoon Ground Cumin
- to taste Salt
- to taste Pepper
- 1 cup Jasmine Rice (or basmati)
- 2 cups Chicken Broth
- 2 pieces Avocado (diced)
- 1 small Red Onion (finely chopped)
- 1/4 cup Fresh Cilantro (chopped)
- 1 tablespoon Olive Oil
- 4 pieces Lime Wedges (for garnish)
Instructions
- Mix honey, lime juice, lime zest, garlic, cumin, salt, and pepper in a bowl.
- Add chicken and coat well, then let it rest for at least 15 minutes.
- Heat oil in a pan over medium-high heat.
- Sear chicken until golden and cooked through, then rest for 5 minutes.
- Rinse rice until water runs clear.
- Combine rice and chicken broth in a pot, bring to a simmer, cover, and cook until tender.
- Fluff rice with a fork and stir in half the cilantro and a squeeze of lime.
- Dice avocado and toss with a little salt and chopped red onion.
- Slice or shred the chicken and arrange over a scoop of rice.
- Top with avocado mix, extra cilantro, and lime wedges.
Notes
Resting the chicken is important to keep juices inside. Adjust rice liquid ratios to prevent burning.
