  • 1.5 cups quick oats
  • 2.25 cups all-purpose flour
  • 1.5 cups brown sugar
  • 0.25 cups butter (melted)
  • 1 cup brown sugar
  • 0.25 cups milk
  • 2 teaspoons vanilla extract
  • 2 tablespoons flour

Instructions

  1. Preheat the oven to 350°F.
  2. Line the pan with parchment paper.
  3. Mix 1.25 cups butter, 1.5 cups quick oats, 2.25 cups flour, and 1.5 cups brown sugar in a bowl.
  4. Press half the mix into the pan to form a crust.
  5. Bake the crust for 12 minutes until it is light gold.
  6. Stir the remaining mix and set it aside.
  7. In a small pot combine 0.25 cups melted butter, 1 cup brown sugar, 0.25 cups milk, 2 teaspoons vanilla extract, and 2 tablespoons flour.
  8. Heat and stir the pot until the mix thickens and bubbles.
  9. Let the caramel cool for a few minutes.
  10. Pour the caramel over the baked crust and spread it smooth.
  11. Sprinkle the reserved crumb mix over the caramel layer.
  12. Press the crumbs lightly so they stick to the caramel.
  13. Return the pan to the oven and bake for 15 to 18 minutes.
  14. Cool the bars in the pan until they reach room temperature.
  15. Chill the pan for at least one hour for clean slices.
  16. Lift the bars from the pan using the parchment paper and cut into squares.

Notes

For a lighter caramel, drizzle honey instead. Add apple slices under the caramel for a fruity hint.
