- 2 lbs beef stew meat or sirloin tips, cubed
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 cups beef broth
- 2 tablespoons soy sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- 2 tablespoons cornstarch
- 2 tablespoons water
- Fresh parsley, chopped (for garnish)
Instructions
- Set the Instant Pot to sauté mode. Once hot, add olive oil and sear the beef tips in batches until browned. Remove and set aside.
- Add diced onion and sauté for 2–3 minutes. Add garlic and cook for 1 minute, scraping up browned bits.
- Pour in beef broth, soy sauce, Worcestershire sauce, thyme, paprika, salt, and pepper. Stir well.
- Return beef tips to the pot. Lock lid, set valve to sealing, and pressure cook on high for 25 minutes.
- Allow a natural pressure release for 10 minutes, then quick release any remaining pressure.
- Remove beef tips with a slotted spoon. In a small bowl, whisk together cornstarch and water until smooth.
- Set pot to sauté and slowly whisk in the slurry. Simmer until the gravy thickens.
- Return beef tips to the gravy and stir to coat. Turn off heat.
- Serve over mashed potatoes, rice, or egg noodles. Garnish with chopped parsley.
Notes
For extra flavor, don’t skip the searing step. Use low-sodium broth if preferred, and add vegetables like carrots or peas for a heartier meal.
