Description

Tender beef tips simmered in a rich, velvety gravy — all made effortlessly in the Instant Pot. A comforting, hearty meal that’s ready in under an hour.


Ingredients

  • 2 lbs beef stew meat or sirloin tips, cubed
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 cups beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Set the Instant Pot to sauté mode. Once hot, add olive oil and sear the beef tips in batches until browned. Remove and set aside.
  2. Add diced onion and sauté for 2–3 minutes. Add garlic and cook for 1 minute, scraping up browned bits.
  3. Pour in beef broth, soy sauce, Worcestershire sauce, thyme, paprika, salt, and pepper. Stir well.
  4. Return beef tips to the pot. Lock lid, set valve to sealing, and pressure cook on high for 25 minutes.
  5. Allow a natural pressure release for 10 minutes, then quick release any remaining pressure.
  6. Remove beef tips with a slotted spoon. In a small bowl, whisk together cornstarch and water until smooth.
  7. Set pot to sauté and slowly whisk in the slurry. Simmer until the gravy thickens.
  8. Return beef tips to the gravy and stir to coat. Turn off heat.
  9. Serve over mashed potatoes, rice, or egg noodles. Garnish with chopped parsley.

Notes

For extra flavor, don’t skip the searing step. Use low-sodium broth if preferred, and add vegetables like carrots or peas for a heartier meal.
