Description
A fantastic recipe to use up leftover mashed potatoes, these Irish Potato Farls are crispy on the outside and fluffy on the inside, perfect for breakfast or as a side dish.

- 2 cups mashed potatoes
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 2 tablespoons butter
- 1/4 cup milk (optional)
- Additional butter for frying
Instructions
- In a large bowl, combine the mashed potatoes, flour, and salt.
- Mix until a dough forms. If the mixture is too dry, add a little milk to reach the desired consistency.
- Divide the dough into two pieces and flatten each into a round about 1/2 inch thick.
- Heat butter in a skillet over medium heat.
- Cook each round for about 5-6 minutes on each side or until golden brown.
- Remove from the skillet and keep warm.
- Serve warm with eggs, bacon, or a dollop of butter.
Notes
For a healthier version, use whole wheat flour and add chopped spinach or herbs.
