Description

A fantastic recipe to use up leftover mashed potatoes, these Irish Potato Farls are crispy on the outside and fluffy on the inside, perfect for breakfast or as a side dish.


Ingredients

  • 2 cups mashed potatoes
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 tablespoons butter
  • 1/4 cup milk (optional)
  • Additional butter for frying

Instructions

  1. In a large bowl, combine the mashed potatoes, flour, and salt.
  2. Mix until a dough forms. If the mixture is too dry, add a little milk to reach the desired consistency.
  3. Divide the dough into two pieces and flatten each into a round about 1/2 inch thick.
  4. Heat butter in a skillet over medium heat.
  5. Cook each round for about 5-6 minutes on each side or until golden brown.
  6. Remove from the skillet and keep warm.
  7. Serve warm with eggs, bacon, or a dollop of butter.

Notes

For a healthier version, use whole wheat flour and add chopped spinach or herbs.
