  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup pineapple juice (from the can) or water
  • 1 can crushed pineapple in juice (20 oz), undrained
  • 1 box instant vanilla pudding mix (3.4 oz)
  • 1 cup cold milk
  • 8 oz whipped topping, thawed
  • 1 teaspoon vanilla extract
  • Pineapple chunks and maraschino cherries, for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch pan.
  2. In a large bowl, whisk together the cake mix, eggs, oil, and pineapple juice until smooth. Pour into the prepared pan and spread evenly.
  3. Bake for 25–28 minutes, or until a toothpick inserted in the center comes out clean.
  4. While hot, spoon the entire can of undrained crushed pineapple evenly over the cake and let it soak in as it cools to room temperature.
  5. In another bowl, whisk the instant pudding mix with cold milk for about 2 minutes until thickened. Gently fold in whipped topping and vanilla extract.
  6. Spread the creamy mixture over the cooled pineapple layer and chill for at least 2 hours.
  7. Garnish with pineapple chunks and cherries if desired, then serve cold.

Notes
