Ingredients

  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup blueberries (fresh or frozen)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream the sugar and butter until light and fluffy.
  3. Add the egg, lemon juice, and lemon zest and mix well.
  4. Whisk the flour, baking soda, and salt in a separate bowl.
  5. Gradually stir the dry mix into the wet mix until just combined.
  6. Fold the blueberries into the dough very gently.
  7. Drop spoonfuls of dough onto a parchment-lined baking sheet.
  8. Bake for 10 to 12 minutes until the edges are lightly golden.
  9. Let the cookies cool a few minutes on the sheet, then move to a wire rack to finish cooling.

Notes

Mix just until the dry ingredients disappear to keep the cookies tender. Fold the fruit with care to prevent bleeding.
