A bright and flavorful side dish of roasted potatoes tossed with lemon, garlic, and feta cheese.
Ingredients

- 4 large potatoes, cubed
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 lemon, zested and juiced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup feta cheese, crumbled
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 425°F (220°C).
- Mix olive oil, garlic, lemon juice, zest, oregano, salt, and pepper in a large bowl.
- Add the cubed potatoes and toss to coat well.
- Spread the coated potatoes in a single layer on a parchment-lined baking sheet.
- Roast for 25 to 30 minutes, stirring once halfway through.
- Remove the tray and sprinkle crumbled feta over the potatoes.
- Return to the oven for 5 to 7 minutes until the feta softens.
- Garnish with chopped parsley and serve warm.
Notes
Cut potatoes to similar sizes for even roasting. Use room temperature lemon and olive oil for best results.
