Description

A bright and flavorful side dish of roasted potatoes tossed with lemon, garlic, and feta cheese.


Ingredients

  • 4 large potatoes, cubed
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup feta cheese, crumbled
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Mix olive oil, garlic, lemon juice, zest, oregano, salt, and pepper in a large bowl.
  3. Add the cubed potatoes and toss to coat well.
  4. Spread the coated potatoes in a single layer on a parchment-lined baking sheet.
  5. Roast for 25 to 30 minutes, stirring once halfway through.
  6. Remove the tray and sprinkle crumbled feta over the potatoes.
  7. Return to the oven for 5 to 7 minutes until the feta softens.
  8. Garnish with chopped parsley and serve warm.

Notes

Cut potatoes to similar sizes for even roasting. Use room temperature lemon and olive oil for best results.
