  • 1 tablespoon dried culinary lavender
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  4. Beat in the egg, lemon zest, lemon juice, culinary lavender, and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop tablespoons of dough onto parchment-lined baking sheets.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Allow to cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

For a healthier version, substitute half the butter with unsweetened applesauce or yogurt, and use whole wheat flour. Store leftover cookies in an airtight container at room temperature for about a week.
