Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking soda, and salt.
- In another bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
- Beat in the egg, lemon zest, lemon juice, culinary lavender, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop tablespoons of dough onto parchment-lined baking sheets.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow to cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
For a healthier version, substitute half the butter with unsweetened applesauce or yogurt, and use whole wheat flour. Store leftover cookies in an airtight container at room temperature for about a week.
