Description

Bright and chewy lemon-flavored Rice Krispy treats, perfect for sunny snacks and family picnics.


Ingredients

  • 6 cups Rice Krispies cereal
  • 3 tablespoons unsalted butter
  • 3 cups mini marshmallows (half lemon-flavored, half classic white)
  • Zest of 1 lemon (plus more for garnish)
  • 1/2 teaspoon lemon extract (optional)
  • 1/2 cup white chocolate chips or melting wafers
  • Lemon peel or zest, for garnish

Instructions

  1. Grease a 9×9-inch pan or line it with parchment paper.
  2. Melt the butter in a large saucepan over low heat.
  3. Add the mini marshmallows and stir until melted and smooth.
  4. Stir in the lemon zest and lemon extract if using.
  5. Remove the pan from heat.
  6. Add the Rice Krispies and stir until well coated.
  7. Press the mixture evenly into the prepared pan with a buttered spatula or wax paper.
  8. Melt the white chocolate chips in 20-second microwave bursts, stirring until smooth.
  9. Drizzle the melted white chocolate over the bars.
  10. Sprinkle more lemon zest or fine lemon peel curls on top.
  11. Let the treats cool and set for at least 30 minutes.
  12. Cut into squares and enjoy.

Notes

Use low heat for melting marshmallows to keep them smooth. Avoid pressing the mixture too hard to maintain a soft and chewy texture.
