Description

Tangy lime bars with a buttery shortbread crust, perfect for spring.


Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup powdered sugar plus extra for dusting
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, cold and cut into pieces
  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1/4 cup all purpose flour (for filling)
  • 1/2 teaspoon baking powder
  • Zest of 2 limes
  • 1/2 cup fresh lime juice (about 3 to 4 limes)

Instructions

  1. Preheat the oven to 350°F and line your pan with parchment.
  2. Mix 1 1/2 cups flour, 1/2 cup powdered sugar, and salt in a bowl.
  3. Cut in cold butter until the mix looks like coarse crumbs.
  4. Press the crust mix into the pan and bake for 15 to 18 minutes until pale gold.
  5. Whisk eggs and 1 1/2 cups sugar until smooth.
  6. Stir in 1/4 cup flour, baking powder, lime zest, and lime juice.
  7. Pour the filling over the hot crust.
  8. Bake for 18 to 22 minutes until the filling is set but slightly jiggly in the center.
  9. Cool fully on a rack, then chill for best slices.
  10. Dust with powdered sugar and cut into bars.

Notes

Use fresh lime juice for the best flavor and chill fully before cutting for clean slices.
