- 1 1/2 cups all purpose flour
- 1/2 cup powdered sugar plus extra for dusting
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, cold and cut into pieces
- 4 large eggs
- 1 1/2 cups granulated sugar
- 1/4 cup all purpose flour (for filling)
- 1/2 teaspoon baking powder
- Zest of 2 limes
- 1/2 cup fresh lime juice (about 3 to 4 limes)
Instructions
- Preheat the oven to 350°F and line your pan with parchment.
- Mix 1 1/2 cups flour, 1/2 cup powdered sugar, and salt in a bowl.
- Cut in cold butter until the mix looks like coarse crumbs.
- Press the crust mix into the pan and bake for 15 to 18 minutes until pale gold.
- Whisk eggs and 1 1/2 cups sugar until smooth.
- Stir in 1/4 cup flour, baking powder, lime zest, and lime juice.
- Pour the filling over the hot crust.
- Bake for 18 to 22 minutes until the filling is set but slightly jiggly in the center.
- Cool fully on a rack, then chill for best slices.
- Dust with powdered sugar and cut into bars.

Use fresh lime juice for the best flavor and chill fully before cutting for clean slices.
