- 4 medium potatoes
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 cup sour cream
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- Olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Wash and dice the potatoes.
- Toss potatoes in olive oil, salt, and pepper.
- Spread potatoes on a baking sheet.
- Bake potatoes for 30 to 35 minutes until crispy.
- Heat a skillet over medium and add the ground beef.
- Cook the beef until it is browned.
- Drain excess fat from the skillet.
- Add the taco seasoning and stir with a little water as the packet says.
- Layer potatoes in bowls.
- Add the seasoned beef over the potatoes.
- Top with shredded cheese so it melts a little.
- Add a dollop of sour cream and scatter the tomatoes and lettuce.
- Serve the bowls warm and enjoy.
Notes
For a lighter version, substitute lean ground turkey or a plant-based crumble for the beef and Greek yogurt for sour cream.
