Description

A quick and filling taco casserole that is low in carbs and perfect for busy weeknights.


Ingredients

  • 1 pound ground beef
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can diced tomatoes (drained)
  • 1 cup chopped onions
  • 1 cup bell peppers (chopped)
  • 2 tablespoons taco seasoning
  • 1/2 cup sour cream
  • 1 cup lettuce (shredded)
  • Taco toppings (such as jalapenos, avocado, or cilantro)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Brown the ground beef in a skillet over medium heat until it is fully cooked.
  3. Drain the fat from the beef.
  4. Add the chopped onions, bell peppers, and taco seasoning to the beef and cook until the vegetables are soft.
  5. In a casserole dish, layer half of the beef mixture.
  6. Add half of the cheese on top of the beef layer.
  7. Spread the drained diced tomatoes over the cheese.
  8. Repeat with the remaining beef mixture.
  9. Top with the remaining cheese.
  10. Bake for 20 to 25 minutes until the cheese melts and bubbles.
  11. Remove the casserole from the oven and let it sit a few minutes.
  12. Serve with shredded lettuce and your favorite taco toppings.

Notes

Use extra lean ground beef or substitute with ground turkey for a healthier option. You can also stir in riced cauliflower for added bulk without extra carbs.
