- 2 cups all-purpose flour
- 1 cup sugar
- 1 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 2 tablespoons matcha powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup powdered sugar (for frosting)
- 3–4 tablespoons lavender-infused milk (or regular milk)
- 1 teaspoon vanilla extract (for frosting)
- Dried lavender (optional, for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the butter, sugar, and powdered sugar until smooth.
- Beat in the egg and vanilla extract.
- In another bowl, whisk together the flour, matcha powder, and salt.
- Gradually mix the dry ingredients into the wet mixture until well combined.
- Roll the dough into balls and place them on a baking sheet lined with parchment paper. Flatten lightly.
- Bake for 10-12 minutes or until the edges start to turn golden.
- Allow cookies to cool on a wire rack.
- For the lavender frosting, mix the powdered sugar, lavender-infused milk, and vanilla extract together until smooth.
- Spread the frosting over the cooled cookies and sprinkle with dried lavender if desired.
Notes
For a healthier option, substitute half of the all-purpose flour with whole wheat flour or use coconut sugar instead of regular sugar.
