Description

A quick and bright Mediterranean Breakfast Sandwich full of fresh flavors, perfect for busy mornings or leisurely weekends.


Ingredients

Scale
  • 2 eggs
  • 1/4 cup feta cheese, crumbled
  • 1 small tomato, diced
  • 1 cup fresh spinach
  • 1 whole grain sandwich bun or english muffin
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Heat a little olive oil in a skillet over medium heat.
  2. Sauté the spinach until it wilts.
  3. Beat the eggs in a bowl and season with salt and pepper.
  4. Pour the eggs into the skillet with the spinach and add the diced tomato.
  5. Cook until the eggs set.
  6. Remove from heat and stir in the feta.
  7. Toast the bun or muffin.
  8. Place the egg mix on the bottom half and top with the other half.
  9. Serve warm.

Notes

You can swap feta for goat cheese or cheddar, and use arugula or kale if desired. Try a whole wheat pita instead of a bun.
