A quick and bright Mediterranean Breakfast Sandwich full of fresh flavors, perfect for busy mornings or leisurely weekends.
Ingredients

- 2 eggs
- 1/4 cup feta cheese, crumbled
- 1 small tomato, diced
- 1 cup fresh spinach
- 1 whole grain sandwich bun or english muffin
- Olive oil
- Salt and pepper to taste
Instructions
- Heat a little olive oil in a skillet over medium heat.
- Sauté the spinach until it wilts.
- Beat the eggs in a bowl and season with salt and pepper.
- Pour the eggs into the skillet with the spinach and add the diced tomato.
- Cook until the eggs set.
- Remove from heat and stir in the feta.
- Toast the bun or muffin.
- Place the egg mix on the bottom half and top with the other half.
- Serve warm.
Notes
You can swap feta for goat cheese or cheddar, and use arugula or kale if desired. Try a whole wheat pita instead of a bun.
