Ingredients

  • 1 tablespoon instant coffee
  • 2 tablespoons hot water
  • 1 cup icing sugar
  • 1 stick unsalted butter, room temperature
  • 1 large egg, beaten
  • 2 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • 1 cup melted dark chocolate
  • 1/4 cup chopped pistachios

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix the coffee granules with hot water until dissolved. Let it cool for a few minutes.
  3. In a large mixing bowl, beat the room temperature butter and icing sugar together until light and fluffy.
  4. Add the beaten egg and the cooled coffee mixture into the butter mixture, and mix well.
  5. In another bowl, whisk together the flour, cornstarch, and ground cinnamon.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Stir in the melted chocolate and chopped pistachios gently.
  8. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them evenly apart.
  9. Bake for 10-12 minutes, or until the edges are lightly golden.
  10. Let the cookies cool on the baking sheet for a few minutes, then transfer them to a cooling rack to cool completely.

Store cooled cookies in an airtight container at room temperature for up to a week. Freeze for longer storage.
