Ingredients

- 1 tablespoon instant coffee
- 2 tablespoons hot water
- 1 cup icing sugar
- 1 stick unsalted butter, room temperature
- 1 large egg, beaten
- 2 cups all-purpose flour
- 1 tablespoon cornstarch
- 1 teaspoon ground cinnamon
- 1 cup melted dark chocolate
- 1/4 cup chopped pistachios
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a small bowl, mix the coffee granules with hot water until dissolved. Let it cool for a few minutes.
- In a large mixing bowl, beat the room temperature butter and icing sugar together until light and fluffy.
- Add the beaten egg and the cooled coffee mixture into the butter mixture, and mix well.
- In another bowl, whisk together the flour, cornstarch, and ground cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the melted chocolate and chopped pistachios gently.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them evenly apart.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for a few minutes, then transfer them to a cooling rack to cool completely.
Notes
Store cooled cookies in an airtight container at room temperature for up to a week. Freeze for longer storage.
