- 1 cup strong brewed espresso, cooled
- 2 tablespoons coffee liqueur (optional)
- 4 egg yolks
- 3/4 cup granulated sugar
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 24 ladyfinger cookies
- 1/2 cup caramel sauce
- Cocoa powder for dusting
- Chocolate shavings for garnish
Instructions
- In a shallow dish, combine cooled espresso and coffee liqueur. Set aside.
- In a large bowl, whisk egg yolks and sugar until pale and creamy.
- Gently fold in mascarpone until smooth.
- In another bowl, whip heavy cream until stiff peaks form, then fold into the mascarpone mixture.
- Quickly dip each ladyfinger in the espresso mixture, ensuring they are soaked but not soggy.
- Layer half of the soaked ladyfingers in the bottom of a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Drizzle with caramel sauce.
- Repeat with remaining ladyfingers and mascarpone mixture.
- Cover and refrigerate for at least 240 minutes or overnight.
- Before serving, dust with cocoa powder and garnish with chocolate shavings.
Notes
For a lighter version, use low-fat mascarpone or whipped topping and reduce sugar.
