Delicious protein balls with a refreshing mint chocolate flavor, perfect for a quick snack or pre-workout boost.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/4 cup honey
  • 1 scoop vanilla protein powder
  • 1/4 teaspoon peppermint extract
  • 1/2 cup mini dark chocolate chips
  • Unsweetened almond milk (as needed)

Instructions

  1. In a large mixing bowl, combine rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract. Mix thoroughly.
  2. If the mixture is too dry, add 1 tablespoon of almond milk at a time until desired consistency is reached.
  3. Gently fold in the mini dark chocolate chips.
  4. Scoop out 1 tablespoon of the mixture and roll into a ball. Repeat.
  5. Place the protein balls on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 20 minutes to firm up.
  7. Store in an airtight container in the refrigerator for up to a week. Enjoy!

Notes

For a healthier twist, use a nut butter with less sugar or a natural sweetener like maple syrup. You can also add chia or flax seeds.
