  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • 1 cup chopped pecans
  • 1 cup shredded sweetened coconut

Instructions

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate bowl, whisk together the cocoa powder, salt, and milk until smooth.
  4. Gradually add the cocoa mixture to the butter mixture, beating until well combined.
  5. Fold in the chopped pecans and shredded coconut.
  6. Pour the filling into the pre-baked pie crust.
  7. Chill the pie in the refrigerator for at least 240 minutes, or until firm.
  8. Serve cold.

Notes

For a lighter version, substitute Greek yogurt for butter and use a sugar substitute if desired.
