Ingredients

  • 2 cups milk
  • 1/2 cup granulated sugar
  • 1/3 cup cornstarch
  • 1/4 teaspoon salt
  • 3 egg yolks, beaten
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter
  • 1 box vanilla wafers
  • 4 ripe bananas, sliced
  • Whipped cream (optional, for topping)

Instructions

  1. In a saucepan over medium heat, mix the milk, sugar, cornstarch, and salt.
  2. Stir continuously until the mixture thickens.
  3. Slowly stir in the beaten egg yolks and continue to cook for another minute.
  4. Remove from heat and stir in the vanilla extract and butter until smooth.
  5. In a serving dish, layer the vanilla wafers, banana slices, and pudding.
  6. Repeat layers until all ingredients are used, ending with pudding on top.
  7. Chill in the refrigerator for at least 2 hours.
  8. Serve chilled, optionally topped with whipped cream.

Notes

For a lighter version, try almond or coconut milk. Use honey or maple syrup for sweetening, and Greek yogurt for added protein.
