One-Pan Honey BBQ Chicken and Rice

Description

An easy weeknight meal featuring honey BBQ chicken and fluffy rice cooked together in one pan.


Ingredients

  • 1 lb chicken thighs or breasts
  • 1 cup rice
  • 2 cups chicken broth
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add chopped onions and bell pepper and sauté until soft.
  3. Add chicken and cook until browned on both sides.
  4. In a bowl, mix honey and BBQ sauce and pour over the chicken.
  5. Add rice and chicken broth to the pan and stir well.
  6. Bring to a boil then reduce heat, cover, and simmer for 20 minutes.
  7. Check that rice is cooked and chicken is tender.
  8. Season with salt and pepper before serving.

Notes

For a healthier twist, swap white rice for brown rice, trim fat from chicken, and use low-sugar BBQ sauce. Stir in spinach at the end for extra veggies.
