Description
An easy weeknight meal featuring honey BBQ chicken and fluffy rice cooked together in one pan.
Ingredients

- 1 lb chicken thighs or breasts
- 1 cup rice
- 2 cups chicken broth
- 1/2 cup honey
- 1/2 cup BBQ sauce
- 1 onion, chopped
- 1 bell pepper, chopped
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large pan over medium heat.
- Add chopped onions and bell pepper and sauté until soft.
- Add chicken and cook until browned on both sides.
- In a bowl, mix honey and BBQ sauce and pour over the chicken.
- Add rice and chicken broth to the pan and stir well.
- Bring to a boil then reduce heat, cover, and simmer for 20 minutes.
- Check that rice is cooked and chicken is tender.
- Season with salt and pepper before serving.
Notes
For a healthier twist, swap white rice for brown rice, trim fat from chicken, and use low-sugar BBQ sauce. Stir in spinach at the end for extra veggies.
