- 1 lb smoked sausage
- 12 oz penne pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 tbsp Cajun seasoning
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup grated Parmesan cheese for garnish
- 2 tbsp olive oil
Instructions
- Heat the olive oil in a large pot over medium heat.
- Slice the smoked sausage and add it to the pot.
- Add the chopped onion and bell pepper and sauté until they brown.
- Stir in the minced garlic and cook for one minute.
- Pour in the diced tomatoes, chicken broth, and heavy cream.
- Add the Cajun seasoning, paprika, salt, and pepper and bring to a boil.
- Stir in the uncooked penne pasta and lower the heat.
- Simmer until the pasta is tender, stirring now and then.
- Remove the pot from the heat and stir in the grated Parmesan until it melts.
- Let the dish rest a few minutes so the sauce settles.
Notes
For lighter variations, swap half the heavy cream for low-fat milk and add a tablespoon of flour to thicken the sauce. You can also use turkey smoked sausage for less fat.
