- 1 large (15 ounce) sweet onion, peeled and ends trimmed off
- 1 tablespoon vegan butter
- 1 tablespoon extra virgin olive oil
- 1 teaspoon cajun seasoning
- 1/4 teaspoon salt (plus more to taste when serving each layer)
- optional additional seasonings: 1/4 teaspoon garlic powder
- 1/4 teaspoon old bay seasoning
- optional garnish: finely diced parsley leaves
Instructions
- Preheat the oven to 375°F.
- Use a melon baller to scoop a well into the top center of the onion about one third down.
- Place the onion on a sheet of aluminum foil.
- Put the vegan butter into the well.
- Mix the olive oil and cajun seasoning and pour this over the butter into the well.
- Let the oil and seasoning drip down the sides of the onion.
- Sprinkle the 1/4 teaspoon salt over the onion and add any extra seasonings you want.
- Seal the onion tightly in the foil with no holes.
- Put the wrapped onion in a small baking dish or cast iron skillet.
- Bake for about 45 to 60 minutes until the onion is fork tender and the center jiggles.
- Open the foil and check for caramel color on the top; reseal and bake another 10 minutes if needed.
- Turn the oven to broil and open the foil.
- Drizzle more melted butter or olive oil and add a pinch of salt.
- Broil for 5 to 10 minutes while watching closely to avoid burning.
- Peel away the outer layer and serve each inner layer with extra salt if you like.
- Pour the juices from the foil over the onion when you serve to keep it moist and full of flavor.
Notes
Let the onion cool to room temperature before storing leftovers in an airtight container. Reheat gently in the oven or microwave, adding juices back for moisture.
